Recipe: Overnight Oats - Banana Bread

2 bananas, mashed
1 cup old fashioned rolled oats
1 cup unsweetened almond milk (or your favorite milk)
1/2 cup plain Greek yogurt (or coconut yogurt)
1 teaspoon maple syrup
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
pinch of sea salt
pinch of cinnamon (optional)
1–2 Tablespoons walnuts
toppings: additional banana slices, maple syrup, nut butter



1) Place all ingredients except the walnuts in a container and stir until well combined. Seal with a lid and place in the fridge overnight (or at least a couple hours).
2) Remove from the fridge in the morning and stir. You’ll notice that the oats soak up a lot of the liquid, so you may want to add a little more milk before serving.
3) Top oats with walnuts and any other toppings you like. Enjoy cold.
4) Overnight oats will keep for up to 5 days in the fridge in a sealed container.
